Let it be said that my mom did this much better than I do. Her vast quantities of applesauce was a beautiful sight to behold. After 7 quarts, I was finished with the whole applesauce whim. My jars WERE really beautiful until I pressure cooked them. I pressured the sauce right out of the top of the jars and then it all turned brown and yucky. I do blame it partly on my stove top. It was not working as well as it should have. But still, at least Brian took a picture so that my kids can always remember that I labored for the good of our family.

I remind myself of my mom.
